SCALET® from Lizzola. It rediscovers an old recipe of hundred years ago. And like that period our cows only eat biological products, herbs and hay of our pastures, which are inside protected areas of Parco delle Orobie.

Our processing techniques are still manual ones to have the right flavour and taste. A biological cheese to enhance the taste of wholesome milk. This product has a particular shape respecting the original tradition. Maybe. This pyramidal shape could guarantee a different flavour. Our SCALET® on its peak tastes a bit riper and more savoury but moving to the base its flavour and consistency become softer.

Agriculture

The variety of herbs make our cheese taste different. Indeed it has a bitter aftertaste in certain periods of the year which confirms the uniqueness of mountain pastures. Matured in our dairy for beyond thirty days, cleaned and turned by hand every day can let you eat it with its rind. It's unique confection guarantees the integrity of flavours.

Lizzola - Ecology

This project was born to preserve our environment through the mantainance of pastures, tracks, mountain lakes, that local people can do. Through the rediscovery of agriculture new jobs can be recreated to let us live in our breathtaking mountains.
